Maintaining its original water content makes this nest is time-saving in pre-cooking Basic Preparation steps below. Once the package is opened, the nest needs to be put in the freezer. Grade AAA is the best quality of swallow nests in the market, the nests originally had very insignificant impurities, thus they have very smooth to perfect surfaces. The nests also have perfect cups.
Basic Preparation
- Soaking Step: Immerse the swallow nests in a bowl filled with fresh, clean water in room temperature. Soaking time: Fresh Raw Nests: 1-2 hours; Dried Raw Nests: 4-5 hours. In the end of this step, the nests will be weighed 4-5 times (5-6 times for Dried Nests) from the original. Note: After cooking, the fully-expanded nests should weight 7-9 times (9-11 times for Dried Nests) of the original.
- Shredding Step: Drain the expanded swallow nests to a fine-mesh strainer. Then shred the nests along their natural strands (like the way we shred chicken breast). If necessary, pinch at the nest legs/ends to break the knots apart.
- Rinsing Step: For about few minutes, rinse the expanded, shredded nests under running water. While the previous Shredding Step exposes any left-over impurities that were buried deep inside the nests (if any), this step will remove it.
- Final Step: The swallow nests are ready to cook. While you may keep these nests refrigerated and tight-sealed, it is recommended to cook them within a week. Please follow one of our recipes according to your taste.
