Maintaining its original water content makes this nest is time-saving in pre-cooking Basic Preparation steps below. Once the package is opened, the nest needs to be put in the freezer.
Basic Preparation
- Soaking Step: Immerse the swallow nests in a bowl filled with fresh, clean water in room temperature. Soaking time: Fresh Raw Nests: 1-2 hours; Dried Raw Nests: 4-5 hours. In the end of this step, the nests will be weighed 4-5 times (5-6 times for Dried Nests) from the original. Note: After cooking, the fully-expanded nests should weight 7-9 times (9-11 times for Dried Nests) of the original.
- Shredding Step: Drain the expanded swallow nests to a fine-mesh strainer. Then shred the nests along their natural strands (like the way we shred chicken breast). If necessary, pinch at the nest legs/ends to break the knots apart.
- Rinsing Step: For about few minutes, rinse the expanded, shredded nests under running water. While the previous Shredding Step exposes any left-over impurities that were buried deep inside the nests (if any), this step will remove it.
- Final Step: The swallow nests are ready to cook. While you may keep these nests refrigerated and tight-sealed, it is recommended to cook them within a week. Please follow one of our recipes according to your taste.
